We stopped in a small Cambodian town, where a local woman has made a successful business buying up tarantulas, cooking them, and selling them to local restaurants and markets as a delicacy.
A pretty good supply of tarantulas.
First, select some good ones and crush their bodies to kill them.
Then wash them and add salt and pepper.
Stir well.
Place them in oil in a wok.
Bring to a sizzle, and cook five minutes.
Strain to remove oil.
Blot more oil off into paper towel.
Savor it.
